Maple syrup is graded and classified by colour. In Ontario, there are two grades and four colour classes:

CANADA #1 (household use)
Extra Light - Very delicate maple flavour
Light - Delicate maple flavour
Medium - Distinct maple flavour
CANADA #2 (baking, flavouring)
Amber - Strong maple flavour

The difference in colour depends upon the weather and the practices of the producer. Light syrup typically comes early in the season when the weather is cooler, whereas the darker amber syrup typically comes later. The cleanliness of the operation and equipment will affect the colour of the syrup as well. McCutcheon's are proud members of OMSPA and belong to the Seal Of Quality Program.
