


Each spring, our family (founders Ken and Rene, daughter Carley, and son Jesse) harvest the sap from 6500 maple trees on our farm in picturesque Medonte Township, 125 km north of Toronto. The preparation for the harvest begins in November, when the 30km of pipeline necessary to collect and transport the sap is laid out in the sugarbush. In early February, the trees are tapped and the dependence on Mother Nature's cooperation begins! The maple sap will only flow in the springtime on days when the temperature climbs above freezing during the day and drops below freezing during the night. The crop can be harvested anytime from mid-February to mid-April according to spring weather patterns. |
